Fun for all ages
This little one turned 5! Her only request was that she had "something unicorn" for her friends. I asked her if she wanted a cake, "No". I asked her if she wanted cupcakes, "No". I scrolled and scrolled through Pinterest until I finally found the perfect idea. An ice-cream cone cupcake! She was instantly excited and wanted to help right away.
Baking doesn't have to be hard if you make it easy. Not every recipe is a long elaborate process. Sometimes you just have to find the right one. This was something she did almost all by herself, and it still looks awesome! It doesn't have to look "professional" as long as they're having fun.
This is the recipe (broken down into steps) for the "Unicorn Cone Cupcakes"
For the cake:
1/2 Cup of unsalted butter
1/2 Cup of vegetable oil
1 1/2 Cup of sugar
4 eggs
1 Tbsp of vanilla
3 Cups of all purpose flour
1 Tbsp of baking powder
1/2 tsp of salt
1 1/4 Cup of buttermilk
For the frosting:
1/2 Cup of milk
2 Tbsp of flour
pinch of salt
3/4 Cup of sugar (you can add up to 1/2 cup of extra sugar for thicker consistency)
1/2 Cup of salter butter, softened
2 tsp of vanilla
Directions for cake:
1. Preheat oven to 350F and prepare by placing one sugar cone in each cupcake hole.
2. In a stand mixing bowl cream together the butter, oil, and sugar until well combined.
3. Add eggs, one at a time, beating well after each addition.
4. Stir in vanilla.
5. In a medium bowl, whisk together flour, baking powder and salt.
6. Using a spatula, gently alternate adding the flour mixture and buttermilk to the butter mixture. Starting and ending with flour mixture. The batter should be smooth and completely combined.
7. Evenly divide batter between cones and bake on 350F for 30-35 minutes. When cakes are done, the surface should spring back to touch.
8. Allow cakes to completely cool before frosting.
9. Frost and decorate to your liking!
Directions for frosting:
1. Whisk milk, flour and salt together in a saucepan over medium-low heat. Keep stirring until the mixture gets think and bubbly.
2. Remove from heat and let cool to room temperature.
3. In a mixing bowl using an electric mixer, beat sugar and butter together until smooth and creamy. Beat in the vanilla.
4. *Note* if you want the frosting to be thicker, add more sugar.
5. Place in piping bag and decorate!
